Biography

Carolyn E. Moore, PhD RDN is an Associate Professor of Nutrition at Texas Woman’s University (TWU) Institute of Health Sciences in Houston, Texas. She has over 55 research publications in professional peer-reviewed journals. Current research areas include food insecurity among college students, nutrition-garden programs for children, the relationship of Vitamin D to cardiovascular disease, and obesity in adults and children. She has collaborated for over 40 years with other researchers in the Texas Medical Center including the USDA Children’s Nutrition Research Center, Houston Methodist Hospital, and Texas Children’s Hospital. Research studies have included intervention studies, examination of dietary intake patterns utilizing the National Health and Nutrition Examination Surveys, and qualitative community studies. Professional practice experience includes 12 years managing the Clinical Nutrition Department at Houston Methodist Hospital. Food industry experience includes 10 years developing new healthy beverages and demonstrating product efficacy with international clinical trials. Moore also published Eat Smart for a Healthy Heart with Dr. Denton Cooley and The Young Chef’s Nutrition Guide and Cookbook. Moore served on the Houston Food Bank Board and currently serves on the Executive Committee of the Boys & Girls Clubs of Greater Houston.
